L’ouverture du champ audiovisuel au privé, les chaînes étrangères par satellites, la démocratisation de l’accès à l’internet et bien d’autres facteurs socio-économiques ont fortement contribué au changement des habitudes de consommation des Algériens, particulièrement depuis la fin des années 90’. Ce qui a entraîné dans ce sillage le développement de certains segments de marchés où la demande liée à ce changement n’a fait qu’augmenter. C’est le cas, justement, pour tout ce qui a trait à l’art culinaire et la décoration de table. Si avant les Algériens se contentaient de peu pour équiper leur cuisine ou pour préparer leurs repas et gâteaux, ce n’est plus le cas aujourd’hui avec tout ce qui est proposé comme nouvelles recettes et équipements modernes. Les offres pullulent, en effet, sur le marché. Les innovations dans ce domaine se poursuivent, profitant de l’engouement des consommateurs pour tout ce qui est nouveau en ce qui concerne les ustensiles de cuisine notamment. Une filière qui recouvre l’ensemble des accessoires et outils de préparation utilisés dans une batterie de cuisine et connaît un grand essor ces dernières années. En dépit de l’absence de statistiques fiables à ce sujet faute d’études, il faut dire qu’ils sont de plus en plus nombreux les commerçants à se lancer dans ce créneau. Engouement et effet de mode On le remarque d’ailleurs à travers les espaces commerciaux et les différents points de vente. La concurrence a fini par s’installer chez les distributeurs qui aménagent des rayons spécialisés. Ces derniers ont pris conscience du potentiel du marché et commercialisent de plus en plus les ustensiles, de l’épicerie fine et même des livres spécialisés qui se vendent comme des petits pains. Même les maisons d’édition ont investi dans cette activité. La part prépondérante du livre culinaire lors des différentes éditions du Salon international du livre d’Alger le montre clairement d’ailleurs. Rien qu’à Alger, les points de vente dédiés aux ustensiles de cuisine sont de plus en plus nombreux à ouvrir, engendrant une offre abondante, notamment par le biais de l’informel. Les sites de vente en ligne n’ont pas échappé à cette mode proposant une multitude de produits importés essentiellement. Sur les réseaux sociaux dans les groupes de cuisine, une part belle est consacrée à ce chapitre. Innovation Les fabricants cherchent également à tirer profit de cette activité, adaptant de plus en plus d’appareils professionnels à une utilisation grand public, misant justement sur les innovations sur tous les plans, suivant ainsi la tendance mondiale mais aussi celle du succès des émissions culinaires de plus en plus présentes sur les écrans. Des émissions qui profitent aux grands annonceurs de ces chaînes et aux marques nouvellement arrivées en Algérie. Dans ce cadre, il faut rappeler la conclusion, en 2017, d’un partenariat entre le tunisien Delta Cuisine et Condor pour le lancement de cuisines équipées sous la dénomination de «Convia». L’engagement a été pris d’offrir aux familles une haute qualité de vie à travers des produits électroménagers avec des technologies de pointe dans le domaine des ustensiles de cuisine. D’autres opérateurs privés algériens se sont également lancés dans ce créneau juteux en jouant sur le design, le marketing et les nouvelles technologies dans un marché de plus en plus concurrentiel. Il faut dire que l’auto-construction et la réception de nouveaux projets dans l’habitat ont favorisé aussi cet essor. «La première chose à laquelle pensent les ménages une fois les clés de leur maison entre les mains c’est d’équiper leur cuisine, alors autant saisir l’opportunité et proposer des produits de qualité», nous dira un commerçant spécialisé dans ce domaine. Mais à quel prix ? «Tout dépend des dimensions, des matériaux utilisés et de ce que veulent nos clients», nous expliquera-t-on à ce sujet. Mais, généralement, cela oscille entre 150 000 et 800 000 DA, voire plus dans certains cas. «J’ai équipé ma cuisine à raison de 300 000 DA», témoignera à ce sujet une mère de famille. Dans le cas de Condor par exemple, ce service est proposé à partir de 150 000 DA. Il est même prévu que les logements réalisés dans le cadre de la formule LPP (Logement promotionnel public) soient équipés par Condor. La vaisselle en provenance essentiellement d’Asie, de Turquie et d’Europe pour tout ce qui luxueux et de qualité n’échappe pas à cet engouement. Les rayons des magasins ne désemplissent pas. Robots ménagers, mixeurs, cuiseurs à vapeur, casseroles, marmites, services à café, faitouts et bien d’autres articles aux différentes formes et couleurs sont proposés à des clients toujours à la recherche de nouveaux modèles pour «actualiser» leur cuisine et salle à manger. «C’est un phénomène de mode», nous dira une maman qui avoue faire régulièrement les magasins dédiés aux métiers de la table pour découvrir les nouveautés. Si certains le font juste pour le plaisir des yeux, d’autres n’hésitent pas à mettre le paquet pour renouveler leur vaisselle. «Avec tout ce qui proposé sur le marché, on ne peut pas résister. Je consacre périodiquement un budget pour renouveler ma vaisselle et être à la page», reconnaîtra-t-elle. C’est le cas, par exemple, à l’occasion des fêtes familiales ou religieuses comme pendant le Ramadhan, période caractérisée par la frénésie de la consommation. C’est ainsi que nous avions décidé d’investir avec l’aide d’un grossiste qui nous approvisionnait via un importateur. Certains producteurs locaux sont par la suite arrivés dans cette activité», poursuivra Omar pour qui beaucoup reste à faire afin d’organiser ce marché mais aussi pour résister face aux verrous à l’importation, comme le relèvera un autre commerçant à Bab Ezzouar : «La restriction des importations nous a perturbés et nous nous sommes retrouvés dans l’obligation d’augmenter les prix pour les articles qui ne sont pas produits localement. Ça ne marche plus comme avant puisque la demande a baissé. Elle émane surtout des pâtissiers et des femmes confectionnant les gâteaux à la demande pour les grandes occasions.» C’est surtout en été pour la célébration des fêtes de mariage et des réussites scolaires que cette demande reprend et que les marchés de gros connus à Alger comme ceux de Garidi, Essemar et Bab Ezzouar sont pris d’assaut. Ce sont en somme autant d’indicateurs qui illustrent la propulsion d’un marché qui profite surtout à l’importation, la contrefaçon et l’informel loin de toute organisation.
